I found how to change the color of the footer, but how do you change the color of the header?  I look over and over, but I just can't find it(it must be right in front of my face, but where?)

It depends on what you mean by the header. If you're referring to the month navigation that runs across the top of the calendar display, I believe that background colour is specified with the 'Navigation Bar Background Color' variable in the Template Preferences section.
