Can the public add items to the calendar? As admin do I get to over see what is being added to the calendar? Is there a setting for this? I cant find it.

The Administrator can change the permissions of the "anonymous" user to allow posting without the need to login. Anyone that doesn't login is "anonymous" by default.

The Administrator will see them in the calendar grids as soon as they're added.

However, if you want to see them before they're added, do NOT give users permission to "automatically approve own events". Then whenever the administrator loads the administration menu, there will be a notice "# Events waiting for approval" at which time they can select the "Approve pending events" link to put them onto the calendar grids, edit them or delete them.

I believe the above is covered in the documentation.
